PROCESSING TECHNOLOGY OF SWEET POTATO FLAKES PRODUCTION

Abstract

Sweet potato is a potential source of carbohydrates, containing flavonoids as antioxidants. Sweet potatoes perish quickly and decrease in their antioxidant levels during storage. The purpose of this study was to apply the processing technology of sweet potatoes into sweet potato flakes. The method used was experiment. Sweet potato flakes are dried of slurry sweet potato using a drum dryer. Sweet potato flakes have dry characteristics, with a higher antioxidant content than sweet potato flour. The process technology applied in the flakes sweet potato processing is a combination of high heat and steam pressure which rotates and heats the drum dryer. The optimal temperature of the drum dryer to dry sweet potato pulp quickly was above 120 oC. The drum rotation is 1 rpm.
